Healthy Chocolate Chip Cookies (GF/Paleo/Low Glycemic)

Hello Friends! Following up from my promise to send some healthy dessert recipes your way...these are some of my favorite treats and they are so fast! I like to bake up a batch and have them on-hand so if I need something sweet, I don't grab for something that isn't as good for me. These cookies are completely guilt-free! Give them a try.


2 cups almond flour
1/4 cup coconut oil, softened (non-vegans can use butter - I like a mix of both)
3 Tablespoons Raw honey (or Pure Maple Syrup)
1/4 teaspoon pink Himalayan salt
1/2 teaspoon non-aluminum baking soda
2 teaspoons organic vanilla extract
1/2 cup organic bittersweet dark chocolate chips (leave these out for completely sugar-free option)

If you aren't egg-free, add 1 organic cage-free egg


Mix all the dry ingredients in one bowl. Mix all the wet ingredients in another. Combine the two bowls and blend until smooth. Place spoonful size portions on a stainless cookie sheet covered in parchment paper (no heavy metal toxicity and the paper makes for easy cleanup!). Bake for 8-10 min at 375 degrees. Cool, and enjoy!

*If you want them to be chocolate chocolate chip, add 1/2 cup of baking cocoa
